I know our blog is full of pumpkin recipes lately, but we can’t help it. Amy and I are nuts for pumpkin desserts and ‘tis the season. I don’t regret it. These muffins are super moist, pumpkiny, and they look good too. I got the recipe from here and made a few slight alterations.
*For the muffins*
1/2 cup of butter (1 stick), softened
1 1/2 cup granulated sugar
15 oz. can of pumpkin (that’s right: the whole can)
2 1/2 cup all-purpose flour
2 tsp. baking powder
1 tbsp. cinnamon
1 1/2 tsp. ground ginger (I substituted extra cinnamon instead)
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1/2 tsp. salt
*For the streusel topping*
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup light brown sugar
2 tsp. cinnamon
5 tbsp. butter, melted
1/2 cup chopped hazelnuts*
*(the original recipe calls for pecans, but I didn’t have those so…)
1.) In a large bowl, cream the butter and sugar together until smooth and fluffy.
2.) Add the pumpkin puree. Then add the eggs one at a time and blend everything together at medium speed.
3.) The original recipe asks you to get another bowl and mix together the flour, baking powder, cinnamon, ginger, cloves, nutmeg, and salt. But I put them directly into this mixture a little bit at a time which worked just as well.
4.) Mix until fully incorporated then spoon or pour into lightly greased muffin pan so that each cup is about 3/4 of the way full. Around this time I preheated my oven to 350 degrees F.
5.) Time to make the topping. Combine the flour, sugar, brown sugar, cinnamon, and butter together. I just used a fork and gently mixed them. You want it to come out crumbly. Then add the hazelnuts and mix everything together. (Note: I only did it in a pot because I don’t have any other bowls in my dorm).
6.) Sprinkle the streusel mixture on top of each muffin (enough to cover the top of the muffin). Bake muffins for 16-22 minutes or until you can stick a toothpick in the center of one of the muffins and it comes out clean.
7.) Let them cool, take them out, and enjoy!
